salt

pepper

old bay

First mix the garlic, salt, pepper, old bay, and olive oil in a bowl. Take the sea bass filet and lay it in the mixture. Make sure to cover all sides. Put a pan on high and place the marinated fish in the pan with a lid on right after to avoid flying oil. Sear the fish on both sides for 3 minutes. Right after you flip it, add about a tablespoon of white wine and two table spoons of mango nector. Let the fish cook for the second half in the pan with the nector and the wine. Meanwine, cut the champagne mango and get the center of the endive in a rough chop. Add both to the left over marinade and add it to the pan. Take out the fish and set the pan to medium letting it cook for about another 1 to 2 minutes. Place the fish on the plate and pour the mixture on top. Enjoy!

Recipe:

2 blood orange
4 limes
1 1/2 tablespoons of sugar
1/4 a cup of san pellegrino

This is a drink I made up on a hot day in Albuquerque. It has the features of a whiskey sour and that's what I based it on but I also wanted something refreshing.

Have you ever been asked for money from a homeless person? When you gave them money, do you think they really bought food? I had a very out of ordinary meeting with a homeless man that was surreal. I was standing outside of Frontier on Central. Some friends and I were talking about travel and along comes this man who I thought was drunk, come up to me. Can you buy me a cup of coffee? He said as he stared at me with a shimmer of need in his eye. He said that the staff of the Frontier kicked him out because of his appearance. I said of course and I asked if he was hungry and he said yes. I went inside and bought him a coffee and a burrito to go. I was blindsided by the fact that all he wanted was food. I mean I have had the homeless man come up and ask for some money for food, which I never believe. That fact that he wasn't trying to drink his pain away was enough for me.

I recently installed Ubuntu 8.10 and I am loving it. The problem I had before with it on my laptop, a Dell XPS M1210 was that it would not work with some of my hardware. This has been resolved, I also use a Logitech QuickCam Pro and I used to search around Google looking for all kinds of tutorials on how to make it work. With the new version of Skype it was just plug and play. This was actually easier than Windows. I had to install the drivers in Windows but not with Ubuntu, it found it and I told Skype to start video automatically and boom I was in a video chat. For anyone who is looking for an alternative to Windows check out Ubuntu. You will love it.

Dun dun dun dun! The Bailout failed. My opinion in this is that it was a good thing. Lets think about this for a second. These financial firms give out loans that were really a bad idea, then they go belly up, and now the US government has to bail them out. I see it as this, we could A. not bail them out and have a rough couple of years or we could B. bail them out and suffer the fallout in about 10 years. I know that I was going to be pissed if this went through. I like living in the US and having the dollar slump to what happened in Germany during the second World War would be quite depressing. Overall, with the stock market dropping almost 600 points, today has been a pretty eventful day on Walstreet.
